スフガニーヤ
イスラエルのハヌカーの伝統的な、やわらかいドーナツ。こんがりと深いきつね色になるまで揚げ、いちごジャムを詰める。イースト生地に少量のブランデーを加えることで、軽やかな食感になり、油を吸いにくくなる。
材料
- 中力粉1 cup, plus more for dusting
- インスタントイースト1 tsp
- 砂糖1 tbsp
- 細塩1/4 tsp

- 小さめの深鍋で揚げ油を170-175°Cに熱し、スフガニーヨットが浮かぶのに十分な深さを保つ。
- 最初はクッキングシート側を上にしてドーナツを数回に分けて揚げ、数秒後に紙をはがし、両面がこんがりきつね色になるまで、片面約2 minutes揚げる。
- 網またはペーパータオルに取り出し、ぬるくなるまで冷ます。
- いちごジャムを小さな丸口金を付けた絞り袋に入れ、側面または上から各ドーナツに詰める。
- たっぷりと粉糖をふりかけ、その日のうちにスフガニーヨットを出す。

Can I substitute the brandy or arak in sufganiyot dough?
Yes. You can omit it entirely, or replace it with 1 teaspoon vanilla, orange juice, or water. The alcohol mainly adds aroma and helps tenderness, so the dough will still work without it.
