  1. 大きなボウルにぬるま湯を入れ、生イーストを溶かす。
  2. 粉を加えて乾いた部分がなくなるまで混ぜ、10分休ませる。
  3. 塩とオリーブオイルを加え、なめらかで弾力が出るまで8 to 10分こねる。
  4. ボウルにふたをして室温で約2時間、生地が2倍になるまで発酵させる。
  5. 生地を2個に分けて丸め、覆いをして45 to 60分休ませる。
  6. ボウルにリコッタ、プロヴォラまたはフィオル・ディ・ラッテ、サラーメ、ペコリーノ、パッサータ、バジル、黒こしょうを混ぜる。
  7. 作業台に薄く粉をふり、各生地玉を約20 cm幅の円形にのばし、縁はやや厚めに残す。
  8. 各円形の片側に具を半量ずつのせ、周囲約2 cmはあけておく。
  9. 生地を具の上にかぶせて半月形にし、縁をしっかり押さえて閉じながら、空気を抜いていく。
  10. 深めの鍋で揚げ油を180°Cに熱する。
  11. ピッツァを1枚ずつ3 to 4分揚げ、途中で一度返し、上面に熱い油をかけながら、こんがりきつね色になってふくらむまで揚げる。
