  5. 水またはあっさりしただしを注ぎ、軽く塩で味をととのえ、穏やかに煮立てる。
  6. ふたをせずに25 to 30 minutes煮て、時々混ぜながら、野菜がやわらかくなりスープがとろみを帯びるまで煮る。
  7. ディタリーニをそのままスープに加え、パスタがくっつかないように頻繁に混ぜながら、ちょうどアルデンテになるまで煮る。
  8. パルミジャーノの皮を取り除き、塩とこしょうで味を調え、火から下ろして5 minutes休ませる。
  9. 温めた器に盛り、刻んだバジルまたはパセリ、すりおろしたパルミジャーノ・レッジャーノ、エクストラバージンオリーブオイルを細く回しかけて供する。
