厚めのニクスタマル・マサで作った生地を焼いてふくらませ、小さなポケットのように開いて、温かいリフライドビーンズ、ケソ・フレスコ、クレマ、レタス、サルサを詰めます。縁はカリッと、中はやわらかく、コマルから熱々のうちに出すのがよいです。

材料
- 新鮮なニクスタマルのコーンマサ2 cups
- ぬるま湯2 to 4 tbsp, as needed
- ラード1 tbsp
- 細かい塩1/2 tsp
- 植物油またはラード、揚げ用1/2 cup
- リフライドビーンズ1 cup
- ケソ・フレスコ、くずしたもの1/2 cup
- メキシカン・クレマ1/4 cup
- 千切りレタス1 cup
- サルサ・ロハまたはサルサ・ベルデ1/2 cup
- 白玉ねぎ、細かく刻む2 tbsp
作り方
- マサをボウルに入れ、塩とラードを加えて、なめらかで扱いやすくなるまでこねる。
- マサが乾いていたり、端が割れるようなら、ぬるま湯を1 tablespoonずつ加えながら、粘土のようにやわらかくなるまでこねる。
- マサを4等分して丸め、湿らせた布巾をかけておく。
- 各ボールを手のひら、またはプラスチックを敷いたトルティーヤプレスで押しつぶし、幅約4 inches、厚さ1/2 inchの厚めの円形にする。
- コマルまたは重めのスキレットを中火で熱し、十分に熱くする。
- ゴルディータスを乾いたコマルで片面3 to 4 minutesずつ、1〜2回返しながら、ところどころ軽く焼き色がつき、少しふくらむまで焼く。
- 小さなフライパンに油またはラードを入れ、中強火で熱して表面がきらめくまで温める。
- 焼いたゴルディータスを各面30 to 60 secondsずつ揚げ、外側が軽くカリッとする程度にしてから、ペーパータオルの上で油を切る。
- ゴルディータスがまだ熱いうちに、小さなナイフで片側の縁に沿って慎重に切れ目を入れ、最後まで切り離さずにポケット状に開く。
- 小鍋でリフライドビーンズをやわらかく、塗り広げられる状態になるまで温める。
- 各ゴルディータスにリフライドビーンズ、ケソ・フレスコ、クレマ、千切りレタス、サルサ、少量の刻み玉ねぎを詰める。
