3 medium
3 tbsp
1 tsp
1/2 tsp

1 tsp, plus more to taste
- 水3 cups, plus more as needed
2 tbsp
2 tbsp
2 pieces
Can I substitute beef or chicken for the lamb/goat in Afghan dopiaza?
Yes. Beef chuck works best as a lamb swap and needs a similar or slightly longer simmer until tender. Chicken thighs cook much faster; add them later and simmer only until cooked through, or they may dry out.
How long does Afghan dopiaza take from start to finish?
Plan on about 1 hour 45 minutes to 2 hours total, including soaking the split peas. Active prep is roughly 20 minutes, then about 1 hour to 1 hour 15 minutes for the meat and 10 minutes to finish the peas.
What are the most common mistakes when making dopiaza?
The biggest mistakes are not browning the onions deeply enough, boiling the meat too hard, and overcooking the split peas until they fall apart. Keep the simmer gentle, and add the peas near the end so they stay intact.
How should I store leftover dopiaza, and does it reheat well?
Store cooled leftovers in an airtight container in the fridge for up to 4 days. It reheats very well; warm gently on the stove with a splash of water if needed. It also freezes for about 2 months, though the onions soften.
What should I serve with Afghan dopiaza?
Serve it hot with Afghan naan or another flatbread to scoop up the meat and broth. Fresh cilantro and the soaked raw onion garnish add brightness. A simple salad or plain yogurt also works well if you want a lighter side.
