ディルシェット
やわらかく煮込んだ仔牛肉を、温かい甘酸っぱいディルソースで仕上げる伝統的なスウェーデン料理のディルシェットです。クリーミーで香り豊かなソースを吸わせるために、ゆでたじゃがいもと一緒に食べます。
材料
- 骨なしの仔牛肩肉または胸肉、3 cm角に切る500g
- 冷水700ml
- 塩1 tsp, plus more to taste
- 黄玉ねぎ、半分に切る1 small
- にんじん、大きめに切る1
- リーク、洗って大きめに切る1 small piece
- ローリエ1
- 白こしょうの粒6
- オールスパイスの実4
- じゃがいも、皮をむく400g
- バター1 1/2 tbsp
- 薄力粉1 1/2 tbsp
- 取り分けておいた肉の煮汁300ml
- 生クリーム100ml
- 白酢1 1/2 tbsp
- 砂糖1 tbsp
- フレッシュディル、細かく刻む25g
- 白こしょう(粉)to taste
作り方
- 仔牛肉を鍋に入れ、冷水を注いで、ゆっくりと沸騰直前まで温める。
- 丁寧にアクを取り、塩、玉ねぎ、にんじん、リーク、ローリエ、白こしょうの粒、オールスパイスを加える。
- ふたを少しずらして、1 to 1 1/4 hours、肉がやわらかくなるが崩れない程度まで弱火で静かに煮る。
- 肉を取り出して温かく保ち、煮汁はこして、そのうち300mlをソース用に取っておく。
- 皮をむいたじゃがいもを塩水で、やわらかくなるまで約20 minutesゆでる。
- 鍋でバターを溶かし、小麦粉を泡立て器で混ぜ、色づかないように1 minute加熱する。
- 取っておいた煮汁を少しずつ泡立て器で加え、さらに生クリームを加えて、なめらかで軽くとろみがつくまで5 minutes煮る。
- 酢と砂糖を加えて混ぜ、味をみて、はっきり甘酸っぱく、しかしバランスが取れるように調整する。
- 刻んだディルを加え、白こしょう(粉)と、必要ならさらに塩で味を調える。
- 仔牛肉をディルソースに戻し、強く沸騰させないように気をつけながら3 to 4 minutesやさしく温める。
- ディルシェットをゆでたじゃがいもと一緒に盛り、肉の上にたっぷりソースをかける。
