Lekkerbekje
Un classico delle pescherie olandesi: tenero pesce bianco in una pastella leggera, speziata e dorata e croccante. Servitelo caldo con limone e ravigottesaus, proprio come al porto o al mercato.

Ingredienti
- Filetti di merluzzo, eglefino o merlano, senza pelle2 fillets, about 180g each
- Farina 00120g, divided
- Amido di mais30g
- Lievito in polvere1 tsp
- Sale fino marino1 tsp, divided
- Pepe bianco1/2 tsp
- Paprica dolce1 tsp
- Aglio in polvere1/2 tsp
- Cipolla in polvere1/2 tsp
- Noce moscata macinata o macis1 small pinch
- Lager chiara fredda o acqua frizzante180ml
- Olio neutro per friggere1 litre
- Spicchi di limone2
- Ravigottesaus o salsa remoulade olandese4 tbsp
Preparazione
- Asciugate molto bene i filetti di pesce con carta da cucina e controllate che non ci siano lische.
- Mescolate in una ciotolina la paprica, il pepe bianco, l'aglio in polvere, la cipolla in polvere, la noce moscata e 1/2 tsp di sale.
- Condite uniformemente il pesce con metà del mix di spezie e lasciatelo riposare per 10 minuti.
- Scaldate l'olio in una padella profonda a 180°C.
- In una ciotola sbattete 100g di farina, l'amido di mais, il lievito in polvere, il restante 1/2 tsp di sale e il mix di spezie rimanente.
- Aggiungete la lager fredda o l'acqua frizzante e mescolate fino a ottenere una pastella liscia, della consistenza della panna fresca densa.
- Mettete i restanti 20g di farina su un piatto e infarinate leggermente ogni filetto, scuotendo via l'eccesso.
- Immergete un filetto nella pastella, lasciate sgocciolare l'eccesso e calatelo con attenzione nell'olio caldo.
- Friggete per 4 to 5 minutes, girando una volta, finché la pastella non è di un bel dorato intenso e croccante e il pesce è cotto.
- Scolate su una griglia o su carta da cucina e ripetete con il secondo filetto, mantenendo l'olio vicino a 180°C.
- Cospargete leggermente di sale e servite subito con gli spicchi di limone e il ravigottesaus.
