Dillkött
Un tradizionale dillkött svedese con tenera carne di vitello stufata in una salsa calda, dolce-agro e al dill. Servitelo con patate bollite in modo che assorbano la salsa cremosa e profumata.
Ingredienti
- Spalla o petto di vitello disossato, tagliato in pezzi da 3 cm500g
- Acqua fredda700ml
- Sale1 tsp, plus more to taste
- Cipolla gialla, tagliata a metà1 small
- Carota, tagliata in pezzi grossi1
- Porro, sciacquato e tagliato in pezzi grossi1 small piece
- Foglia di alloro1
- Grani di pepe bianco6
- Bacche di pimento4
- Patate, pelate400g
- Burro1 1/2 tbsp
- Farina 001 1/2 tbsp
- Brodo di carne tenuto da parte300ml
- Panna fresca100ml
- Aceto bianco1 1/2 tbsp
- Zucchero1 tbsp
- Aneto fresco, tritato finemente25g
- Pepe bianco macinatoto taste
Preparazione
- Metti il vitello in una pentola, copri con l’acqua fredda e porta lentamente a leggera ebollizione.
- Elimina con cura la schiuma, poi aggiungi il sale, la cipolla, la carota, il porro, la foglia di alloro, i grani di pepe bianco e il pimento.
- Fai sobbollire dolcemente con il coperchio leggermente socchiuso per 1 to 1 1/4 hours, finché la carne è tenera ma non si sfalda.
- Preleva la carne e tienila in caldo, quindi filtra il brodo e tienine da parte 300ml per la salsa.
- Lessa le patate pelate in acqua salata finché sono tenere, per circa 20 minuti.
- Fai sciogliere il burro in un pentolino, incorpora la farina con una frusta e cuoci per 1 minuto senza farla colorire.
- Unisci gradualmente il brodo tenuto da parte, poi aggiungi la panna e fai sobbollire per 5 minutes finché la salsa è liscia e leggermente addensata.
- Incorpora l’aceto e lo zucchero, poi assaggia e regola fino a ottenere una salsa decisamente dolce-agro ma equilibrata.
- Aggiungi l’aneto tritato e insaporisci con pepe bianco macinato e altro sale se necessario.
- Rimetti il vitello nella salsa all’aneto e scaldalo delicatamente per 3 to 4 minutes senza far bollire forte.
- Servi il dillkött con le patate bollite e versa abbondante salsa sulla carne.
