Tuwo Shinkafa
Tuwo shinkafa is a soft, smooth rice swallow from northern Nigeria, made by cooking rice until very tender and paddling it into a stretchy mound. It is traditionally served warm with soups such as miyan kuka, miyan taushe, or gbegiri.
Ingredientes
- tuwo shinkafa rice flour2 cups
- water5 cups
- ground white rice1 cup
- salt1 tsp
- vegetable oil1 tbsp
- potash (kanwa), optional1/4 tsp
Preparación
- Place 4 cups of the water in a pot and bring it to a boil over medium heat.
- In a small bowl, mix the rice flour and ground white rice with the remaining 1 cup of water until smooth and lump-free.
- If using, dissolve the potash in a little warm water and stir it into the boiling water.
- Reduce the heat and pour in the rice mixture slowly, stirring continuously with a wooden spoon to prevent lumps.
- Keep stirring and cooking until the mixture thickens and pulls away from the sides of the pot.
- Add the salt and vegetable oil, then continue to fold and stir the tuwo until it becomes smooth, firm, and stretchy.
- Cover and let it steam on very low heat for 2 to 3 minutes, then shape and serve hot.
