Sufganiyot
Donas israelíes tiernas de Janucá, fritas hasta quedar profundamente doradas y rellenas de mermelada de fresa. Un poco de brandy en la masa levada le da esa textura ligera clásica y ayuda a que el aceite no se absorba.
Ingredientes
- Harina de trigo común1 taza, plus more for dusting
- Levadura instantánea1 cucharadita
- Azúcar1 cucharada
- Sal fina1/4 cucharadita
- Yema de huevo1
- Aceite neutro1 cucharada, plus 3 cups for frying
- Brandy o arak1 cucharadita
- Agua tibia1/4 taza, plus 1 tbsp if needed
- Mermelada de fresa1/4 taza
- Azúcar glas2 cucharadas
Preparación
- Combina la harina, la levadura, el azúcar y la sal en un bol para mezclar.
- Añade la yema de huevo, 1 cucharada de aceite, el brandy y 1/4 taza de agua tibia, luego mezcla hasta formar una masa blanda.

- Corta 4 rounds con un cortador o vaso de 2 1/2 inch, luego colócalos sobre pequeños cuadrados de papel de hornear.
- Cubre sin apretar y deja fermentar hasta que estén esponjosos y aireados, 30 to 40 minutes.
- Calienta el aceite para freír en una olla pequeña y honda hasta 170-175°C, manteniendo el aceite lo bastante profundo para que los sufganiyot floten.
- Fríe las donas en tandas, con el lado del papel hacia arriba al principio, retirando el papel después de unos segundos, hasta que estén doradas, about 2 minutes per side.
