Lekkerbekje

Ingredientes
- Filetes de bacalao, eglefino o merlán, sin piel2 filetes, about 180g each
- Harina de trigo120g, divided
- Maicena30g
- Levadura en polvo1 tsp
- Sal marina fina1 tsp, divided
- Pimienta blanca1/2 tsp
- Pimentón dulce1 tsp
- Ajo en polvo1/2 tsp
- Cebolla en polvo1/2 tsp
- Nuez moscada molida o macis1 small pinch
- Lager pálida fría o agua con gas180ml
- Aceite neutro para freír en abundante aceite1 litre
- Gajos de limón2
- Salsa ravigotte neerlandesa o salsa remoulade4 tbsp
Preparación
- Seca muy bien los filetes de pescado con papel de cocina y comprueba que no tengan espinas.
- Mezcla el pimentón, la pimienta blanca, el ajo en polvo, la cebolla en polvo, la nuez moscada y 1/2 tsp de sal en un cuenco pequeño.
- Sazona el pescado de manera uniforme con la mitad de la mezcla de especias y déjalo reposar durante 10 minutos.
- Calienta el aceite en una cazuela profunda hasta 180°C.
- En un cuenco, bate 100g de harina, la maicena, la levadura en polvo, el 1/2 tsp de sal restante y la mezcla de especias restante.
- Incorpora la lager fría o el agua con gas hasta obtener una masa lisa, del espesor de la nata espesa.
- Pon los 20g de harina restantes en un plato y enharina ligeramente cada filete de pescado, sacudiendo el exceso.
- Sumerge un filete en la masa, deja que escurra el exceso y bájalo con cuidado al aceite caliente.
- Fríe durante 4 to 5 minutes, dándole la vuelta una vez, hasta que la masa esté bien dorada y crujiente y el pescado esté hecho.
- Escurre sobre una rejilla o papel de cocina y repite con el segundo filete, manteniendo el aceite cerca de 180°C.
- Espolvorea ligeramente con sal y sirve inmediatamente con los gajos de limón y la ravigottesaus.
