Method
- Toss the shrimp with chili powder, cumin, lime juice, and salt. Sauté in a pan with olive oil until pink and opaque.
- In a small bowl, mash the avocado with a pinch of salt and lime juice to make a rough guacamole.
- Spread the mashed avocado onto the wraps. Top with the cooked shrimp, corn, and cilantro.
- Add a dollop of sour cream or yogurt if desired, roll up the wrap, and serve.
