  3. Place the leek, carrot, onion, celery, bay leaves, and crushed peppercorns in the bottom of a large mussel pot or heavy lidded pan.
  4. Pour in the white wine and set the pan over high heat.
  5. Add the mussels on top of the vegetables, cover tightly, and bring to a vigorous steam.
  6. After 2 minutes, lift the pan with oven mitts and shake it firmly so the mussels move from top to bottom.
  7. Return the pan to the heat and cook for another 3 to 5 minutes, shaking once more, until the mussels have opened.
  8. Remove the pan from the heat, sprinkle with parsley, and discard any mussels that remain closed.
  9. Serve immediately from the pot with some of the hot cooking broth, the vegetables, and crusty bread or fries alongside.
