Ingredients
- Water2 cups
- White maize flour1 1/4 cups
Method
- Bring the water to a full boil in a heavy saucepan or sufuria over medium-high heat.
- Sprinkle in about 1/4 cup of the maize flour and stir with a sturdy wooden spoon to make a thin porridge base.
- Add the remaining maize flour gradually while stirring continuously to prevent lumps.
- Reduce the heat to medium-low and keep stirring, pressing the mixture firmly against the sides of the pot as it thickens.
- Once the ugali pulls away from the sides of the pot, continue turning and pressing it for 5 to 8 minutes so the flour cooks through and the texture becomes smooth and firm.
- Gather the ugali into a mound with the wooden spoon, cover the pot for 1 minute on low heat, then turn it once more.
- Tip the ugali onto a plate or board and shape it into a neat dome while hot.
- Serve immediately, tearing off pieces by hand to scoop up stew, sukuma wiki, fish, or meat.
Common questions
Can I substitute a different flour for the white maize flour in ugali?
Yes, but the texture will change. Fine cornmeal can work in a pinch, though it may taste sweeter and feel grainier. Avoid wheat flour. For more traditional ugali, use white maize flour or very fine cornmeal only.
How long does ugali take to cook once the flour is added?
After adding the flour, expect about 5 to 8 minutes of vigorous stirring and pressing over medium-low heat. The ugali is ready when it becomes smooth, firm, and pulls cleanly away from the sides of the pot.
What are the most common mistakes when making ugali?
The biggest mistakes are adding too much flour too fast, not stirring constantly, and cooking over heat that is too high. These cause lumps, sticking, or a raw flour taste. Add flour gradually and keep pressing it firmly as it thickens.
How should I store leftover ugali?
Let it cool completely, then wrap it tightly or store it in an airtight container in the fridge for up to 2 days. Reheat gently by steaming, microwaving with a splash of water, or warming in a covered pan over low heat.
What is the best way to serve ugali?
Serve ugali immediately while hot and firm enough to hold its shape. Shape it into a dome, then tear off pieces with your hand and use them to scoop stew, sukuma wiki, fish, or meat. It pairs best with saucy dishes.
