Tiropita
A small Greek cheese pie with crisp, oil-brushed phyllo and a salty feta filling softened with egg and yogurt. It is baked until deeply golden, then rested briefly so the layers settle and cut cleanly.
Ingredients
- Phyllo pastry sheets, thawed6 sheets
- Feta cheese, crumbled180g
- Graviera or kefalotyri cheese, grated50g
- Large egg1
- Greek strained yogurt2 tbsp
- Whole milk1 tbsp
- Extra-virgin olive oil3 tbsp
- Unsalted butter, melted1 tbsp
- Freshly ground black pepper1/4 tsp
- Ground nutmeg1 pinch
Method
- Heat the oven to 180°C and lightly oil a small baking dish about 20 x 15 cm.
- In a bowl, mix the crumbled feta, grated graviera, egg, yogurt, milk, black pepper, and nutmeg until just combined, keeping some texture in the cheese.
- Stir the olive oil and melted butter together in a small bowl for brushing the phyllo.
- Lay one phyllo sheet in the dish, letting the edges overhang, and brush it lightly with the oil-butter mixture.
- Repeat with two more phyllo sheets, laying each one at a slight angle and brushing each layer lightly.
- Spread the cheese filling evenly over the phyllo base.
- Fold the overhanging phyllo edges over the filling, brushing them as you fold.
- Top with the remaining three phyllo sheets, brushing each one and tucking the edges neatly down the sides of the dish.
- Brush the top well, then score the pie into 2 portions with a sharp knife without cutting all the way through the bottom.
- Bake for 30 to 35 minutes, until the phyllo is crisp, puffed, and deep golden brown.
- Let the tiropita rest for 10 minutes before cutting along the scored lines and serving warm.
Common questions
Can I substitute the graviera or kefalotyri cheese in tiropita?
Yes. If you can’t find graviera or kefalotyri, use aged parmesan, pecorino, or a mix of sharp cheddar and a little parmesan for saltiness. Keep feta as the main cheese for the classic tangy flavor and crumbly texture.
How far ahead can I assemble tiropita before baking?
You can assemble it a few hours ahead and keep it refrigerated, covered tightly. For best crispness, brush the top just before baking. If chilled from the fridge, add a few extra minutes to the baking time.
What are the most common mistakes when making tiropita?
The biggest mistakes are using wet filling, skipping enough butter/oil between phyllo layers, and overbaking the pastry before the center sets. Also, work quickly with phyllo so it doesn’t dry out and crack while assembling.
How should I store leftover tiropita?
Cool it completely, then cover and refrigerate for up to 3 days. Reheat in the oven at 180°C until hot and crisp again. Avoid microwaving if possible, because it softens the phyllo and makes it soggy.
What should I serve with tiropita?
Serve tiropita warm or at room temperature with a simple salad, olives, or tomato-cucumber salad. It also works well as part of a mezze spread. A light yogurt dip or a squeeze of lemon can balance the richness.
