Tastira
Tastira is a Tunisian plate of fried peppers, tomatoes, potatoes, garlic, and eggs, chopped together while still warm and seasoned with tabel and harissa. It is usually served with bread, olives, and a little tuna for a simple, deeply savory meal.

Method
- Cut the peeled potatoes into small cubes, pat them dry, and fry them in hot oil until golden and tender; lift out and drain on paper towels.
- Make a small slit in each green pepper, then fry the peppers whole until blistered, softened, and lightly browned on all sides.
- Transfer the fried peppers to a covered bowl for 5 minutes, then peel off the loose skins, remove the stems and seeds, and keep the flesh.
- Fry the whole garlic cloves until soft and lightly golden, then remove them from the oil.
- Halve the tomatoes and fry them cut-side down until the skins loosen and the flesh collapses; peel off the skins.
- Fry the eggs in the same pan until the whites are set and the yolks are still slightly soft, or cook them a little firmer if preferred.
- On a large chopping board or in a shallow bowl, chop the fried peppers, tomatoes, garlic, potatoes, and eggs together with two knives until coarse and well mixed, not puréed.
- Mix in the harissa, tabel karouia, salt, and black pepper while the vegetables are still warm.
- Spoon the tastira onto a serving plate, top with drained tuna and olives, and serve with flatbread.
