Tanjia Marrakchia
A Marrakech specialty of lamb slow-cooked in a clay tanjia with preserved lemon, garlic, saffron, cumin, and smen until the meat collapses into its fragrant juices. Traditionally the sealed pot is taken to the hammam furnace and left in the warm ashes for hours.
Ingredients

Method
- In a tanjia pot, clay jar, or heavy oven-safe pot, combine the meat with olive oil, onion, garlic, preserved lemon, smen, cumin, ginger, paprika, saffron, black pepper, and salt.
- Mix well so the meat is evenly coated, then add the water and scatter the coriander over the top.
- Cover the pot tightly with a lid or foil so the steam stays trapped.
- Cook slowly in a very low oven at about 160°C for 2 1/2 to 3 hours, or until the meat is very tender and the sauce is reduced and fragrant.
- If needed, uncover for the last 15 minutes to let the sauce thicken slightly, then serve hot with Moroccan bread or couscous.
Common questions
Can I substitute the preserved lemon, smen, or ras el hanout if I can't find them?
Yes. Use lemon zest plus a little juice for preserved lemon, unsalted butter or ghee for smen, and a mix of cumin, ginger, turmeric, black pepper, cinnamon, coriander, and a pinch of paprika for ras el hanout.
How long does Tanjia Marrakchia need to cook, and what’s the best temperature?
Cook it low and slow for about 4 to 6 hours in a covered pot, or until the lamb is very tender and pulls apart easily. In a low oven, aim for about 150–160°C / 300–325°F.
What are the most common mistakes when making Tanjia Marrakchia?
The biggest mistakes are using too much liquid, cooking too hot, and not seasoning the lamb well enough before cooking. Also avoid chopping the meat too small, which can make it dry or stringy.
How should I store leftovers, and can I freeze them?
Cool the tanjia completely, then refrigerate in an airtight container for up to 4 days. It freezes well for about 2 months. Reheat gently with a splash of water so the lamb stays moist.
