Tamina
Tamina is a warm Algerian sweet made with carefully toasted semolina, honey, and butter, traditionally served for births and Mawlid. It has a soft, sandy texture and a deep nutty aroma finished with cinnamon.
Ingredients
- Medium semolina1 cup
- Unsalted butter1/4 cup
- Honey1/3 cup
- Orange blossom water1 teaspoon
- Ground cinnamon1/2 teaspoon
- Whole blanched almonds6
Method
- Place the semolina in a dry heavy pan over low to medium-low heat.
- Toast the semolina slowly, stirring constantly with a wooden spoon, until it turns an even golden color and smells nutty, about 12 to 15 minutes.
- Transfer the toasted semolina to a bowl so it does not continue browning in the hot pan.
- In the same pan, melt the butter gently over low heat without letting it brown.
- Add the honey and orange blossom water to the melted butter and stir until the mixture is warm, smooth, and just beginning to loosen.
- Reduce the heat to very low and add the toasted semolina gradually, stirring constantly until it absorbs the honey-butter mixture and becomes a soft, thick paste.
- Cook for 1 to 2 minutes, stirring, until the tamina holds together but remains tender and glossy.
- Spoon the tamina onto a small serving plate and smooth the top with the back of a spoon.
- Dust the surface with ground cinnamon and decorate with whole blanched almonds.
- Serve warm, traditionally with coffee or mint tea.
Common questions
Can I substitute medium semolina with another grain or flour for tamina?
Medium semolina works best for tamina’s sandy, cohesive texture. Fine semolina can make it pastier, and coarse semolina may stay gritty. Regular flour is not a good substitute. If needed, use fine semolina and reduce cooking time slightly.
How long does tamina take from start to finish?
Plan on about 20 to 30 minutes total. Toasting the semolina takes 12 to 15 minutes, then combining and cooking with the butter-honey mixture takes another 3 to 5 minutes. Let it cool briefly before serving.
What are the most common mistakes when making tamina?
The biggest mistakes are toasting the semolina too fast, which can make it bitter, and overheating the butter or honey, which can dull the flavor. Also, adding the semolina too quickly can cause lumps instead of a smooth, glossy paste.
How should tamina be stored, and can I reheat it?
Store tamina covered in the refrigerator for up to 3 days. It will firm up as it chills. Reheat gently over very low heat with a small splash of water or a little melted butter to restore softness. Avoid high heat.
What is the best way to serve tamina?
Serve tamina warm or at room temperature, smooth on a plate and dusted with cinnamon. Whole blanched almonds add crunch and a traditional finish. It is often served as a snack or dessert with tea or coffee.
