  5. Place a spoonful of filling on each cabbage leaf, fold in the sides, and roll firmly but not tightly because the rice will expand.
  6. Spread half of the sauerkraut in the bottom of a heavy pot and tuck in the smoked bacon or smoked pork and the bay leaf.
  7. Arrange the cabbage rolls seam-side down over the sauerkraut, then cover with the remaining sauerkraut.
  8. Pour in enough water or light pork stock to almost cover the rolls, bring to a gentle simmer, cover, and cook over low heat for 1 hour 30 minutes.
  9. Carefully lift out the stuffed cabbage rolls and keep them warm while leaving the sauerkraut and cooking liquid in the pot.
  10. In a small pan, melt the remaining lard, stir in the flour, and cook until pale golden, then remove from the heat and stir in the remaining 1 teaspoon sweet paprika.
  11. Whisk the paprika roux into the sauerkraut cooking liquid and simmer for 5 minutes until slightly thickened.
  12. Return the rolls to the pot and warm them gently for 5 minutes without vigorous boiling.
  13. Serve the stuffed cabbage with plenty of sauerkraut, pieces of smoked meat, and spoonfuls of sour cream.
