Method
- Prepare the sushi rice and season it with vinegar, sugar, and salt. Allow it to cool to room temperature.
- Dice the sushi-grade tuna into very small cubes. Mix with mayonnaise and sriracha sauce.
- Place a sheet of nori on the bamboo mat. Spread rice over the nori, leaving a 1-inch border at the top.
- Spoon the spicy tuna mixture in a line across the bottom third of the rice.
- Roll the sushi tightly from the bottom up, sealing the edge with a little water.
- Cut into 6-8 pieces and garnish with extra spicy mayo or green onions.
