Shaiyah
Shaiyah is Sudanese dry-fried lamb cooked slowly in its own juices until tender, then browned with onions, garlic, cumin, and black pepper. It is usually eaten hot with kisra, gurasa, or fresh bread and a squeeze of lime.

Ingredients
- Boneless lamb shoulder or leg, with some fat, cut into small bite-size pieces400g

- Yellow onion, thinly sliced1 medium

Method
- Place a heavy pot or deep frying pan over medium heat and melt the lamb fat or ghee.
- Add the lamb pieces and stir until they lose their raw color and begin to release their juices.
- Add the salt, cover the pot, and cook over medium-low heat for 15 minutes, stirring occasionally so the meat cooks in its own liquid.
- Add the water, cover again, and simmer for 15 to 20 minutes until the lamb is tender and most of the liquid has reduced.
- Uncover the pot and continue cooking, stirring often, until the remaining liquid evaporates and the lamb starts to fry in its fat.
- Add the sliced onion and cook for 6 to 8 minutes until softened and lightly golden around the edges.
- Stir in the crushed garlic, cumin, black pepper, coriander, cardamom, and slit green chili.
- Fry for another 3 to 5 minutes until the lamb is browned, fragrant, and glossy, with no sauce left in the pan.
- Taste and adjust the salt, then serve hot with lime wedges and kisra, gurasa, or warm bread.
