  1. Heat the oven to 200°C fan or 220°C conventional and line a baking tray with parchment.
  2. Mix the sausage meat, onion, breadcrumbs, sage, English mustard, and white pepper in a bowl until evenly combined.
  3. Lightly flour the work surface and unroll the puff pastry into a rectangle about 20 x 25 cm.
  4. Cut the pastry in half lengthways to make two long strips.
  5. Divide the sausage mixture into two equal portions and shape each into a long, even cylinder down the centre of each pastry strip.
  6. Brush one long edge of each pastry strip with beaten egg.
  7. Fold the pastry over the sausage meat and press the edges together firmly, placing the seam underneath.
  8. Trim the ends neatly, then slash the top of each roll 3 or 4 times with a sharp knife.
  9. Brush the pastry all over with beaten egg.
  10. Bake for 22 to 25 minutes until the pastry is deeply golden, puffed, and the sausage filling is cooked through.
  11. Rest for 5 minutes before serving warm.
