Sardine Kefta

Tender sardine balls are seasoned with Moroccan chermoula, then gently simmered in a thick tomato sauce with olives and preserved lemon. This is the kind of coastal tagine served with bread for scooping up every bit of sauce.

Ingredients

Method

  1. Check the sardine fillets carefully for bones, then chop the flesh very finely with a knife or pulse briefly until it forms a coarse paste.
  2. In a bowl, mix the sardine paste with the cooked rice, half the cilantro, half the parsley, 1 grated garlic clove, 1 teaspoon paprika, 1 teaspoon cumin, ginger, cayenne or harissa if using, 1/2 teaspoon salt, black pepper, lemon juice, and 1 tablespoon olive oil.
  3. Wet your hands and shape the mixture into small walnut-size balls, pressing gently so they hold together.
  4. In a tagine or wide shallow pan, warm the remaining 2 tablespoons olive oil over medium heat and add the remaining 2 grated garlic cloves for a few seconds until fragrant.
  5. Stir in the grated tomatoes, tomato paste, remaining 1 teaspoon paprika, remaining 1/2 teaspoon cumin, remaining 1/4 teaspoon salt, and the remaining cilantro and parsley.
  6. Simmer the sauce for 8 to 10 minutes, stirring occasionally, until it thickens and the oil begins to separate at the edges.
  7. Add 1/4 cup water if the sauce is very thick, then arrange the sardine kefta in the sauce in one layer without stirring.
  8. Scatter the green pepper strips, olives, and preserved lemon over the top.
  9. Cover and simmer gently for 10 to 12 minutes, spooning sauce over the kefta once or twice, until the balls are firm and cooked through.
  10. Uncover for the last 2 to 3 minutes to reduce the sauce, then serve hot directly from the tagine or pan with Moroccan bread.

Common questions

Can I substitute canned sardines for fresh sardines in sardine kefta?

Yes, but the texture will be softer and saltier. Use sardines packed in water or olive oil, drain well, and reduce added salt. Mash gently rather than blending, and add a little extra rice if the mixture feels loose.

How long does sardine kefta take to make from start to finish?

Plan for about 35 to 45 minutes total. Cleaning and chopping the sardines takes the most time, the sauce needs 8 to 10 minutes to simmer, and the kefta usually cooks through in another 10 to 12 minutes.

What are the most common mistakes when making sardine kefta?

The biggest mistakes are leaving bones in, overprocessing the fish into a puree, and making the mixture too wet. Also avoid overcooking, which makes the kefta dry and fishy. Wet hands help shape them without sticking.

How should I store leftover sardine kefta, and can I reheat it?

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a covered pan over low heat with a spoonful of water or sauce, just until warmed through. Avoid microwaving too long, which can toughen the fish.

What should I serve with sardine kefta?

Serve it hot with Moroccan bread, couscous, or plain rice to soak up the tomato sauce. A simple salad, preserved lemon, or olives work well on the side. A squeeze of fresh lemon right before serving brightens the flavor.
