- Ground cumin1/2 tsp
- Dried dill seeds, lightly crushed1/2 tsp
- Salt3/4 tsp, or to taste
- Olive oil2 tbsp

Method
- Put the lentils and water in a small pot, bring to a boil, then simmer for about 15 minutes until the lentils are partly tender but not collapsing.
- Add the cubed eggplant, cumin, dill seeds, and salt, then simmer for 12 to 15 minutes until the eggplant is soft and the lentils are fully cooked.
- In a bowl, whisk the pomegranate juice, pomegranate molasses, tahini, and flour until smooth with no lumps.
- Pour the pomegranate-tahini mixture into the pot while stirring constantly so it thickens evenly.
- Simmer gently for 5 to 7 minutes, stirring often, until the stew is thick, glossy, and spoonable; add a splash of water only if it becomes too stiff.
- Heat the olive oil in a small skillet over medium heat, add the crushed garlic and green chili, and fry until fragrant and lightly golden.
- Stir the hot garlic-chili oil into the stew, taste, and adjust salt or pomegranate molasses for a balanced tart flavor.
- Let the rummaniyeh rest for 5 minutes before serving, then spoon into shallow bowls and scatter with pomegranate seeds.
- Serve warm or at room temperature with flatbread for scooping.
Common questions
Can I substitute the eggplant or lentils in Rummaniyeh if I don't have the exact kind listed?
Yes. Green or brown lentils both work well; red lentils are not ideal because they break down too fast. For eggplant, any firm globe or Italian eggplant works. If using very seedy eggplant, salt and drain it first.
How long does Rummaniyeh take from start to finish?
Plan for about 35 to 45 minutes total. Lentils need roughly 15 minutes, then eggplant another 12 to 15 minutes, and the pomegranate-tahini simmer 5 to 7 minutes. Give yourself a few extra minutes for whisking and seasoning.
What are the most common mistakes when making this stew?
The biggest mistake is adding the pomegranate-tahini mixture too quickly or with lumps, which can make the stew uneven. Another is overcooking the lentils before the eggplant goes in, or boiling too hard after thickening, which can cause scorching.
How should I store leftover Rummaniyeh, and can I reheat it?
Store cooled leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stove over low heat, adding a splash of water if needed because it thickens as it sits. Stir well while warming.
What’s the best way to serve Rummaniyeh?
Serve it warm as a thick stew, finished with pomegranate seeds for freshness. It pairs well with pita bread, rice, or a simple salad. If the flavor tastes flat, a small drizzle of pomegranate molasses before serving helps brighten it.
