Method
- Slit each date lengthwise, remove the pit, and tuck one walnut half inside each date.
- Arrange the stuffed dates snugly in a small shallow serving dish, seam side down.
- Sift the flour into a dry skillet and toast it over low heat, stirring constantly, until it turns light golden beige and smells nutty, about 8 to 10 minutes.
- Add the butter or ghee to the toasted flour and stir over low heat until it becomes a smooth, glossy paste, about 2 to 3 minutes.
- Stir in 1/2 teaspoon of the cinnamon and the cardamom, then remove the skillet from the heat.
- Spoon the hot flour-butter mixture evenly over the dates, spreading it gently to cover them.
- Let the ranginak sit for 10 minutes so the topping settles but remains tender.
- Mix the powdered sugar with the remaining 1/2 teaspoon cinnamon and dust it over the top.
- Finish with chopped pistachios and serve at room temperature with Persian tea.
