Rakott krumpli

A homely Hungarian layered potato bake with firm slices of potato, hard-boiled eggs, smoky kolbász, and tangy tejföl baked until bubbling and lightly golden. It is rich, comforting, and best served after a short rest so the layers hold together.

Ingredients

Method

  1. Put the unpeeled potatoes in a pot of salted water, bring to a boil, and cook for 20 to 25 minutes until just tender but not falling apart.
  2. Boil the eggs for 10 minutes, then cool them in cold water, peel, and slice into rounds.
  3. Drain the potatoes, let them cool until easy to handle, then peel and slice into 5 mm rounds.
  4. Slice the kolbász into thin rounds and warm it briefly in a small pan until it releases some red, smoky fat; remove from the heat.
  5. Heat the oven to 180°C and grease a small baking dish with the pork lard, then scatter the breadcrumbs over the base.
  6. Arrange one third of the potato slices in the dish, season lightly with salt and pepper, then layer over half of the egg slices and half of the kolbász.
  7. Spoon a few tablespoons of tejföl over the layer, including a little of the kolbász fat.
  8. Repeat with another third of the potatoes, the remaining egg, the remaining kolbász, and more tejföl.
  9. Finish with the last potatoes, season lightly, and spread the remaining tejföl over the top.
  10. Bake for 30 to 35 minutes until the top is lightly browned at the edges and the sour cream is bubbling.
  11. Rest for 10 minutes before serving so the layers settle.

Common questions

Can I substitute the Hungarian smoked kolbász if I can't find it?

Yes. Use another smoked sausage with paprika and garlic if possible, such as kielbasa or smoked chorizo. Choose one that’s fairly fatty so it perfumes the potatoes and gives the dish enough richness and color.

How long does rakott krumpli take to make from start to finish?

Plan on about 60 to 75 minutes total. Boiling potatoes and eggs takes roughly 25 to 30 minutes, then slicing and layering takes 15 to 20 minutes, and baking usually needs 20 to 25 minutes.

What are the most common mistakes when making this dish?

Overboiling the potatoes is the biggest one; they should be just tender or they’ll break apart when layered. Also avoid underseasoning between layers, and don’t skip warming the sausage so its fat flavors the dish.

How should I store leftovers, and can I reheat them?

Cool leftovers quickly, cover, and refrigerate for up to 3 days. Reheat in a 160°C oven until hot through, or microwave individual portions. The texture softens a bit, but the flavor often improves the next day.

What should I serve with rakott krumpli?

It’s rich, so serve it with something sharp or fresh: cucumber salad, pickled vegetables, sauerkraut, or a simple green salad. A spoon of extra tejföl on top is traditional and helps balance the smoked sausage.
