  4. In the same oil, add mustard seeds and let them splutter, then add cumin seeds, asafoetida, curry leaves, and chopped green chilli.
  5. Add the chopped onion and cook until translucent, stirring often.
  6. Add the diced potato, a pinch of salt, and a splash of water, then cover and cook until the potato is tender.
  7. Add the seasoned poha and fried peanuts to the pan, mixing gently so the flakes do not break.
  8. Cover and steam on low heat for 2 to 3 minutes until the poha is hot and fluffy.
  9. Turn off the heat and stir in lemon juice and chopped coriander.
  10. Serve hot, topped with fresh grated coconut and sev if using.
