Pani Puri
Crisp hollow puris are filled with spiced potato and kala chana, then dipped into chilled mint-coriander pani with a little sweet tamarind chutney. It is bright, tangy, spicy, and meant to be eaten immediately in one bite.

Ingredients
- Ready-made pani puri puris16
- Potatoes, boiled and peeled2 medium
- Boiled kala chana1/2 cup
- Onion, finely chopped1 small
- Fresh coriander, chopped2 tbsp
- Chaat masala1 tsp
- Roasted cumin powder1 tsp
- Red chilli powder1/2 tsp
- Black salt1 tsp, divided
- Saltto taste
- Mint leaves1 packed cup
- Fresh coriander leaves1/2 packed cup
- Green chillies2
- Ginger1/2 inch piece
- Tamarind pulp2 tbsp
- Jaggery1 tbsp
- Pani puri masala1 tbsp
- Cold water2 1/2 cups
- Lemon juice1 tbsp
- Boondi2 tbsp
- Sweet tamarind-date chutney1/4 cup
Method
- Mash the boiled potatoes roughly in a bowl, leaving some small chunks for texture.
- Add the boiled kala chana, chopped onion, chopped coriander, chaat masala, 1/2 tsp roasted cumin powder, red chilli powder, 1/2 tsp black salt, and salt to the potatoes.
- Mix the filling well and adjust salt or chilli to taste.
- Blend the mint leaves, coriander leaves, green chillies, ginger, tamarind pulp, jaggery, pani puri masala, remaining 1/2 tsp roasted cumin powder, remaining 1/2 tsp black salt, lemon juice, and 1/2 cup cold water into a smooth paste.
- Strain the paste into a large bowl if you prefer a smoother pani, pressing well to extract the flavour.
- Stir in the remaining 2 cups cold water and taste for balance; it should be spicy, tangy, salty, and lightly sweet.
- Chill the pani for at least 20 minutes, then add the boondi just before serving.
- Arrange the puris, potato-kala chana filling, sweet tamarind-date chutney, and chilled pani separately for serving.
- To eat, gently crack the top of each puri with your thumb, add a spoonful of filling, add a little sweet chutney, dip or pour in the chilled pani, and eat immediately in one bite.

Can I substitute boiled chickpeas for kala chana in pani puri filling?
Yes. Boiled chickpeas work well if kala chana isn’t available. Use the same amount, but keep them a little firm so the filling doesn’t turn mushy. Taste and add a bit more chaat masala if needed.
