Obleas con arequipe
Estas obleas colombianas se arman con láminas delgadas y crujientes rellenas de arequipe, como las que se venden en plazas y parques. El queso fresco rallado y la mermelada de mora equilibran el dulce con un toque salado y frutal.

Common questions
What can I use instead of arequipe if I can’t find it?
Dulce de leche is the closest substitute and works very well. Use the same amount. If it’s very thick, warm it slightly so it spreads easily without tearing the obleas.
Can I make the obleas ahead of time?
It’s best to assemble them right before serving. Once filled, the obleas soften quickly from the moisture in the arequipe, jam, and condensed milk. You can prep the fillings earlier, but keep the layers separate.
What are the most common mistakes when assembling obleas?
Using too much filling, spreading to the very edge, or pressing too hard are the main mistakes. That causes cracking and leaking. Keep the layer thin and even, then press very gently just to seal.
How should I store leftover obleas?
Assembled obleas do not store well because they lose their crisp texture fast. If you have leftovers, wrap them loosely and refrigerate briefly, but expect them to soften. For best quality, store fillings separately and assemble fresh.
What is the best way to serve obleas with arequipe?
Serve them immediately after assembling, whole or cut in half. They are best on a plate or napkin because they can be sticky. A light sprinkle of extra cheese on top is optional and gives a nice salty contrast.
