Muhammar is Emirati sweet spiced rice, coloured with date syrup, saffron, and warm cardamom. It is traditionally served with fried fish, where the salty crisp fish balances the gentle sweetness of the rice.

Ingredients
- Basmati rice1 cup
- Water5 cups
- Date syrup2 tbsp
- Sugar1 tbsp

Method
- Rinse the basmati rice several times until the water runs mostly clear, then soak it in fresh water for 30 minutes.
- Crush the saffron lightly and soak it in the rose water while the rice rests.
- Bring 5 cups of water to a boil with the whole cardamom pods, cinnamon stick, cloves, and salt.
- Drain the soaked rice, add it to the boiling spiced water, and cook for 6 to 7 minutes until the grains are about three-quarters cooked but still firm in the centre.
- Drain the rice carefully and remove the whole spices if desired.
- Return the empty pot to low heat, add the ghee and sugar, and stir until the sugar melts into a light amber syrup.
- Stir in the date syrup, ground cardamom, ground cinnamon, and saffron rose water, letting the mixture bubble gently for a few seconds.
- Add the drained rice back to the pot and fold it gently through the syrup until the grains are tinted golden brown without breaking them.
- Shape the rice into a loose mound, cover the pot with a tight lid, and steam over the lowest heat for 15 minutes.
- Turn off the heat and let the rice rest, still covered, for 5 minutes before fluffing gently with a fork.
- Serve warm, traditionally alongside crisp fried kingfish or hamour.

Yes, but the flavor changes. Jaggery gives a closer caramel note; use the same amount, dissolving it fully. Honey is sweeter and more floral, so start with about 75% of the date syrup amount and taste carefully.
