Mpoto mpoto is a comforting Ghanaian yam porridge cooked until the yam partly melts into a thick, hearty sauce. This version uses red palm oil, smoked fish, pepper, and kontomire for the familiar home-style flavour.

Ingredients
- White yam, peeled and cut into chunks600g
- Smoked fish, bones removed and flaked150g
- Red palm oil3 tbsp
- Onion, chopped1 medium
- Fresh tomatoes, chopped2 medium
- Scotch bonnet pepper1 small
- Kontomire or spinach, shredded1 cup
- Dried shrimp powder1 tbsp
- Salted fish or momoni, rinsed and crumbled1 tbsp
- Saltto taste
- Water2 1/2 cups
Method
- Place the yam chunks in a pot with the chopped onion, tomatoes, scotch bonnet, salted fish or momoni, and water.
- Bring to a boil over medium-high heat, then reduce to a steady simmer and cook for 18 to 22 minutes, until the yam is tender.
- Remove the scotch bonnet if you want a milder porridge, or mash it lightly into the pot for more heat.
- Use a wooden spoon to mash some of the yam against the side of the pot, leaving plenty of chunks whole so the porridge becomes thick but still textured.
- Stir in the palm oil, dried shrimp powder, and flaked smoked fish, then simmer for 8 to 10 minutes so the oil blends into the yam.
- Add the shredded kontomire or spinach and cook for 3 to 5 minutes, stirring gently so the fish does not break down too much.
- Taste and adjust the salt, then simmer until the porridge is thick, glossy, and spoonable.
- Serve hot in bowls, with a little extra palm oil on top if desired.
