  5. Add 1/2 cup water, cover, and simmer for 35 to 45 minutes until the chicken is tender and the sauce is reduced.
  6. Stir 1 tablespoon bloomed saffron into the chicken sauce during the last 5 minutes of cooking.
  7. Put the orange peel strips in a small saucepan, cover with water, boil for 2 minutes, and drain; repeat this blanching twice more to remove bitterness.
  8. Return the orange peel to the saucepan with 1 tablespoon sugar and 3 tablespoons water, then simmer until glossy and lightly candied.
