Ingredients
- Lamb shoulder or leg, cut into small bone-in or boneless pieces300g
- Small okra, stems trimmed without cutting into the pods250g
- Olive oil or neutral oil2 tbsp
- Onion, finely chopped1 small
- Garlic cloves, crushed3
- Tomato paste2 tbsp
- Fresh tomato, grated or finely chopped1 medium
- Libyan bzaar spice blend1 tsp
- Ground turmeric1/4 tsp
- Ground cinnamon1 small pinch
- Hot paprika or cayenne pepper1/4 tsp, or to taste
- Black pepper1/4 tsp
- Salt3/4 tsp, or to taste
- Water2 cups, plus more if needed
- Fresh lemon juice1 tbsp
- Fresh coriander or parsley, chopped1 tbsp
Method
- Trim the okra by shaving around the stem caps without piercing the pods, then rinse and pat completely dry.
- Heat the oil in a heavy pot over medium-high heat and brown the lamb pieces on all sides.
- Add the chopped onion and cook for 5 minutes until softened and lightly golden.
- Stir in the crushed garlic, tomato paste, grated tomato, bzaar, turmeric, cinnamon, hot paprika, black pepper, and salt, then fry the mixture for 3 minutes until the oil turns red and fragrant.
- Pour in 2 cups of water, scrape the bottom of the pot, bring to a boil, then cover and simmer gently for 45 to 55 minutes until the lamb is nearly tender.
- Add the trimmed okra without stirring too much, cover, and simmer for 12 to 15 minutes until the okra is tender but still whole.
- Uncover and simmer for another 5 minutes if the sauce needs to thicken, gently shaking the pot instead of stirring to keep the okra intact.
- Stir in the lemon juice and chopped coriander or parsley, taste for salt, and rest the stew for 5 minutes before serving.
- Serve hot with Libyan bread, plain rice, or couscous.
