  5. Place the chopped offal in a chilled bowl and add the finely chopped onion and green chilies.
  6. In a small bowl, loosen the dakua with the lemon juice, then stir in the cumin, shatta, black pepper, and salt.
  7. Add 1 to 2 drops of fresh sheep bile if using, tasting carefully because it is powerfully bitter.
  8. Pour the dressing over the chopped offal and mix thoroughly with clean hands or a spoon until glossy and evenly coated.
  9. Taste and adjust with more lemon, salt, or shatta so the marara is sharp, hot, nutty, and slightly bitter.
  10. Serve immediately, cool, with kisra or flatbread for scooping.
