  3. Drain the desalted meats, cut them into bite-size pieces, and simmer them in fresh water for 20 minutes; drain and set aside.
  4. Place the cooked maniva in a heavy pot, add enough water to loosen it to a thick stew consistency, and bring it to a gentle simmer.
  5. Add the carne seca, smoked ribs, pork belly, bacon, paio, and bay leaf to the maniva.
  6. Simmer uncovered over low heat for 5 to 6 hours, stirring often and adding small amounts of hot water whenever the stew becomes too thick.
  7. In a small pan, heat the oil or lard and sauté the onion until soft, then add the garlic and cook until fragrant.
  8. Stir the onion and garlic into the maniçoba and continue simmering for another 1 to 2 hours, until the meats are tender and the stew is dark, glossy, and rich.
  9. Taste carefully before adding salt, as the preserved meats may already season the stew.
  10. Serve hot with white rice, farinha d’água, and pimenta de cheiro or tucupi pepper sauce on the side.
