  4. Mix the yeast with the warm milk and let it stand for 5 minutes, then add it to the semolina mixture with the orange blossom water and rose water.
  5. Knead gently just until a soft, cohesive dough forms, adding a few drops of milk only if it feels crumbly, then cover and rest for 30 minutes.
  6. Mix the date paste with cinnamon, anise, and olive oil or samneh until smooth, then divide it into 6 small balls.
  7. Divide the dough into 6 balls, flatten each one in your palm, place a date ball in the center, and close the dough around it completely.
  8. Press each filled ball into a floured maamoul mold, tap it out firmly onto a parchment-lined baking tray, and repeat with the remaining cookies.
  9. Bake at 180°C / 350°F for 12 to 15 minutes, until set and very lightly golden on the bottom but still pale on top.
