  6. Whisk in the cold lager or sparkling water until you have a smooth batter about the thickness of double cream.
  7. Put the remaining 20g flour on a plate and lightly dust each fish fillet, shaking off the excess.
  8. Dip one fillet into the batter, let the excess drip off, and carefully lower it into the hot oil.
  9. Fry for 4 to 5 minutes, turning once, until the batter is deep golden and crisp and the fish is cooked through.
  10. Drain on a wire rack or kitchen paper and repeat with the second fillet, keeping the oil close to 180°C.
  11. Sprinkle lightly with salt and serve immediately with lemon wedges and ravigottesaus.
