  4. While the wheat cooks, pour boiling water over the poppy seeds, simmer gently for 10 minutes, then drain very well through a fine sieve lined with cloth.
  5. Grind the drained poppy seeds twice through a fine meat grinder or poppy-seed grinder until they become dark, moist, and aromatic.
  6. Cover the raisins with hot water for 10 minutes, then drain them well.
  7. In a bowl, combine the warm cooked wheat, ground poppy seeds, honey, walnuts, almonds, raisins, dried figs or apricots, and candied orange peel.
  8. Stir thoroughly, adding a spoonful or two of reserved wheat cooking liquid if the kutia feels too stiff.
  9. Let the kutia rest for at least 30 minutes so the flavors blend, then serve at room temperature or lightly chilled.
