Kleija

Kleija are spiced Saudi cookies from Qassim, made with a tender wheat dough and a dark, fragrant date molasses filling. They are stamped before baking so the tops turn crisp and patterned while the center stays rich and sticky.

Ingredients

Method

  1. Mix the whole wheat flour, all-purpose flour, yeast, sugar, 1/2 teaspoon cardamom, 1/4 teaspoon ginger, 1/4 teaspoon cinnamon, and salt in a bowl.
  2. Rub in the melted ghee and vegetable oil with your fingertips until the flour looks sandy and evenly coated.
  3. Add the warm water gradually and knead for 5 minutes, until the dough is soft, smooth, and not sticky.
  4. Cover the dough and let it rest for 45 minutes, until slightly puffed and relaxed.
  5. Combine the date molasses, date paste, toasted flour, dried black lime, remaining 1/4 teaspoon cardamom, remaining 1/4 teaspoon ginger, and remaining 1/4 teaspoon cinnamon in a small saucepan.
  6. Cook the filling over low heat for 2 to 3 minutes, stirring constantly, until thick and glossy, then let it cool completely.
  7. Heat the oven to 190°C or 375°F and line a baking tray with parchment paper.
  8. Divide the dough into 6 equal balls and divide the filling into 6 small portions.
  9. Flatten one dough ball into a small disc, place a portion of filling in the center, then close the dough around it and pinch well to seal.
  10. Place the sealed ball seam-side down and press it gently in a kleija mold or stamp it with a patterned press to make a round, decorated cookie.
  11. Repeat with the remaining dough and filling, arranging the cookies on the prepared tray with space between them.
  12. Whisk the egg yolk with the milk and brush a thin layer over the tops of the cookies.
  13. Sprinkle lightly with sesame seeds.
  14. Bake for 15 to 18 minutes, until the kleija are deep golden on top and firm around the edges.
  15. Cool for at least 10 minutes before serving so the spiced date molasses filling can settle.

Common questions

Can I substitute the ghee or date ingredients in Kleija if I don’t have them?

Yes. Use unsalted butter for ghee, but the flavor will be less traditional. If you can’t find date molasses, use thick date syrup or a blend of honey and a little brown sugar, and keep the filling thick.

How long does Kleija take from start to finish?

Plan for about 1.5 to 2 hours total. That includes 5 minutes kneading, 45 minutes resting, and roughly 15 to 20 minutes for filling, shaping, and baking, depending on your oven and speed.

What are the most common mistakes when making Kleija?

The biggest mistakes are adding too much water, which makes the dough sticky, and undercooking the filling, which can leak during baking. Also avoid overbaking; Kleija should be golden, not hard or dry.

How should I store Kleija, and can I freeze it?

Store cooled Kleija in an airtight container at room temperature for 2 to 3 days. For longer storage, freeze them well wrapped for up to 2 months. Rewarm briefly in a low oven to restore the texture.

What is the best way to serve Kleija?

Serve Kleija warm or at room temperature with Arabic coffee or tea. They’re often offered as a snack or dessert, and a light dusting of powdered sugar is optional, though the filling is usually sweet enough on its own.
