Kinilaw
Kinilaw is a Filipino raw fish dish gently cured in native vinegar and calamansi, then mixed with ginger, onion, and chilies. This version follows the traditional quick rinse-and-drain method so the fish stays clean-tasting, tender, and bright.

Ingredients
- Very fresh tanigue, tuna, or malasugi, skinless and boneless300g
- Native coconut vinegar or cane vinegar1/2 cup
- Calamansi juice3 tbsp
- Red onion, thinly sliced1 small
- Fresh ginger, peeled and finely julienned1 tbsp
- Siling labuyo, thinly sliced1 to 2 pieces
- Long green chili, thinly sliced1 piece
- Cucumber, seeded and diced1/2 cup
- Kakang gata or thick coconut milk2 tbsp
- Salt3/4 tsp
- Freshly ground black pepper1/4 tsp
Method
- Keep the fish well chilled, then cut it into 1.5 cm cubes with a clean sharp knife.
- Place the fish in a bowl and pour over 1/4 cup of the vinegar, gently tossing for 30 seconds to rinse and lightly firm the surface.
- Drain the fish completely and discard this first vinegar.
- In a clean bowl, combine the remaining 1/4 cup vinegar, calamansi juice, salt, black pepper, ginger, red onion, siling labuyo, and long green chili.
- Add the drained fish and gently toss until every piece is coated.
- Let the fish cure in the mixture for 5 to 8 minutes, just until the outside turns opaque while the center remains tender.
- Fold in the cucumber and kakang gata, tasting and adjusting with more salt, calamansi, or chili if needed.
- Serve immediately while cold, with steamed rice or as pulutan.
Common questions
Can I substitute the fish in kinilaw if tanigue, tuna, or malasugi isn’t available?
Yes. Use the freshest sushi-grade firm fish you can get, with a clean ocean smell and no sliminess. Skip oily or soft fish like mackerel substitutes unless very fresh, because they can turn mushy or taste too strong.
How long should the fish cure in the vinegar and calamansi mixture?
Usually 5 to 8 minutes is enough. You want the outside to turn opaque while the center stays tender. Cure too long and the fish gets firm, chalky, and less clean-tasting.
What are the most common mistakes when making kinilaw?
Using fish that isn’t very fresh, over-marinating, and not draining the first vinegar rinse are the biggest errors. Also avoid too much coconut milk early, which can dull the acidity and make the dish taste flat.
Can I store leftover kinilaw, and for how long?
Kinilaw is best eaten immediately. If needed, refrigerate it in a covered container for up to 1 day, but the texture will tighten and the fish will keep curing. Do not leave it at room temperature.
