Method
- Use only meat bought the same day from a trusted butcher, kept ice-cold, and minced very finely after all fat and sinew are removed.
- Rinse the fine bulgur briefly under cold water, drain very well, and let it sit for 10 minutes to soften without becoming wet.
- Place the grated onion in a bowl with the seven spice, cumin, marjoram or mint, Aleppo pepper, and salt, then mix into a fragrant paste.
- Add the softened bulgur to the onion-spice paste and rub it together with your fingers until the grains are evenly seasoned.
- Add the chilled minced lamb and knead firmly by hand, dipping your fingers in ice water as needed, until the mixture becomes smooth, cohesive, and slightly glossy.
