- Firm white fish, cut into medium pieces300g
- Kudampuli, rinsed and soaked in warm water2 pieces

- Coconut oil2 tbsp
- Fenugreek seeds1/4 tsp
- Shallots, thinly sliced6
- Fresh ginger, finely chopped1 tbsp
- Garlic, finely chopped4 cloves
- Green chili, slit1
- Curry leaves2 sprigs
- Kashmiri chili powder1 tbsp
- Turmeric powder1/4 tsp
- Coriander powder1 tsp
- Thin coconut milk3/4 cup
- Thick coconut milk1/3 cup

Method
- Soak the rinsed kudampuli in 1/2 cup warm water for 10 minutes, keeping both the fruit and soaking water.
- Heat coconut oil in a small clay pot or heavy pan over medium heat.
- Add fenugreek seeds and let them turn lightly golden, taking care not to burn them.
- Add shallots, ginger, garlic, green chili, and one sprig of curry leaves, then sauté until the shallots soften and turn pale golden.
- Lower the heat and add Kashmiri chili powder, turmeric powder, and coriander powder, stirring for 20 to 30 seconds until aromatic.
- Pour in the thin coconut milk, then add the soaked kudampuli with its soaking water and salt.
- Bring the curry to a gentle simmer and cook for 5 minutes so the sourness infuses the gravy.
- Add the fish pieces in a single layer and swirl the pot gently instead of stirring, so the fish does not break.
- Cover and simmer on low heat for 8 to 10 minutes, until the fish is just cooked through.
- Lower the heat completely, add the thick coconut milk, and gently swirl the pot to combine.
- Warm for 1 to 2 minutes without boiling, then turn off the heat.
- Finish with the remaining curry leaves and a small drizzle of coconut oil, then rest the curry for 10 minutes before serving.

Can I substitute kudampuli if I can’t find it?
Yes. Use tamarind pulp as the closest substitute: start with a small amount and taste, since it can be sharper than kudampuli. A little kokum also works, but adjust gradually to avoid overpowering the curry.
