  7. Cover with the remaining kadayıf and press down very firmly with your palm or the base of a small plate to compact the künefe.
  8. Cook over low to medium-low heat for 8 to 10 minutes, rotating the pan often, until the underside is deep golden and crisp.
  9. Invert the künefe onto a flat plate, slide it back into the pan uncooked side down, and cook for another 6 to 8 minutes until golden and the cheese has melted.
  10. Remove the pan from the heat and immediately pour the cooled syrup evenly over the hot künefe.
  11. Let it absorb the syrup for 2 minutes, then sprinkle with ground pistachios and serve hot while the cheese is still stretchy.
