Köfte
Classic Turkish köfte made with well-kneaded minced meat, grated onion, stale bread, parsley, and warm spices. The patties are rested before cooking so they stay juicy and develop their familiar kebapçı-style texture.

Ingredients
- medium-fat ground beef or lamb-beef mix300g
- small onion, grated1
- stale white bread, crust removed and finely crumbled1 slice
- egg1 small
- flat-leaf parsley, finely chopped2 tbsp
- ground cumin1 tsp
- sweet paprika1/2 tsp
- pul biber1/2 tsp
- black pepper1/2 tsp
- salt3/4 tsp
- baking soda1/4 tsp
- cold water1 tbsp
- neutral oil, for the pan1 tbsp
- green peppers, for serving2
- tomato, halved, for serving1
Method
- Place the ground meat in a mixing bowl and add the grated onion with its juices, crumbled stale bread, egg, parsley, cumin, paprika, pul biber, black pepper, salt, baking soda, and cold water.
- Knead the mixture firmly by hand for 8 to 10 minutes until it becomes sticky, smooth, and holds together well.
- Cover the bowl and refrigerate the köfte mixture for at least 1 hour, or up to overnight for deeper flavor.
- With lightly wet hands, divide the mixture into 8 small portions and shape each into an oval patty about 1.5 cm thick.
- Heat a cast-iron pan, grill pan, or mangal-style grill over medium-high heat and lightly oil the surface.
- Cook the köfte for 3 to 4 minutes per side, turning once or twice, until browned outside and cooked through but still juicy.
- In the same pan or on the grill, blister the green peppers and tomato halves until softened and lightly charred.
- Serve the köfte hot with the grilled peppers and tomato, with pide or lavash if desired.
Common questions
Can I substitute the stale white bread in köfte if I don't have any?
Yes. Use fine fresh breadcrumbs, soaked-and-squeezed bread, or 2–3 tablespoons oat crumbs. Keep the mixture fairly soft but not wet; too much substitute makes the patties dense instead of tender.
How long should I knead and chill the köfte mixture?
Knead 8–10 minutes until sticky and cohesive, then chill at least 1 hour. Overnight is even better for flavor and easier shaping. If rushed, 30 minutes helps, but the texture won’t be as well-developed.
What are the most common mistakes when making köfte?
Overmixing with too much bread, adding too much water, or cooking over heat that’s too low are the biggest issues. Also avoid pressing the patties hard in the pan, which squeezes out juices and makes them dry.
Can I store köfte mixture or cooked köfte ahead of time?
Uncooked mixture keeps refrigerated for up to 24 hours, tightly covered. Shaped raw patties can also be chilled a few hours. Cooked köfte keep 3–4 days in the fridge and reheat gently in a covered pan or oven.
What should I serve with köfte besides green peppers?
Serve with blistered tomatoes, rice pilaf, shepherd’s salad, yogurt, or warm flatbread. A squeeze of lemon and a simple onion-sumac salad work very well, and they balance the richness of the meat.
