  3. Cover and cook over medium heat for 1 to 1 1/2 hours, adding a little water only if needed, until the meat is tender and the stock is reduced and flavorful.
  4. Remove the cooked brain and mash it smoothly with 2 tablespoons of the goat stock; set aside.
  5. Dissolve the potash in 2 tablespoons warm water, let any grit settle, then pour off only the clear liquid.
  6. Pour the palm oil into a clean pot or traditional mortar bowl and stir in the clear potash liquid gradually until the oil thickens and turns a bright yellow-orange.
  7. Stir in the mashed brain, ground crayfish, ground ehuru, pounded scotch bonnet, ogiri, remaining seasoning cube, and 2 to 3 tablespoons of the goat stock.
  8. Add the tender goat head pieces and toss well so every piece is coated in the thick spiced palm oil sauce.
  9. Set the pot over low heat for 3 to 5 minutes, stirring gently; do not let it boil hard or the sauce may split.
  10. Taste and adjust salt, then fold in 1 tablespoon sliced utazi leaves.
  11. Serve hot in a small wooden bowl or plate, garnished with onion rings and extra utazi.
