Ingredients
- Chicken500g
- Basmati Rice2 cups
- Yogurt1 cup
- Fried Onions1 cup
- Saffron strands1 pinch
- Ghee3 tbsp
Method
- Marinate the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, chopped mint, coriander, and fried onions. Let it rest for at least 1 hour.
- Wash and soak basmati rice for 30 minutes. Boil water with whole spices (cardamom, cloves, bay leaf) and salt. Cook rice until 70% done, then drain.
- In a heavy-bottomed pot, layer the marinated chicken at the bottom. Top with the partially cooked rice. Drizzle saffron milk and ghee over the rice.
- Seal the pot with dough or a tight lid. Cook on high heat for 10 minutes, then lower the heat to minimum and cook for 20 minutes (Dum style).
- Let it rest for 10 minutes, then fluff the rice gently to mix the layers before serving.
