- Lower the heat to medium-high and fry the eggs in the same olive oil, spooning a little hot oil over the whites so they set while the yolks remain runny.
- Place the fried eggs on top of the potatoes and season the eggs with a small pinch of salt.
- Tear the jamón into pieces and scatter it over and around the eggs so it softens slightly from the heat.
- At the table, cut into the eggs with a knife and fork, breaking the yolks so they run over the potatoes before serving.
