Haft Mewa
Haft mewa is an Afghan Nowruz fruit-and-nut compote made by soaking seven dried fruits and nuts until the water turns naturally sweet and fragrant. It is served chilled in small bowls with plenty of the syrupy soaking liquid.
Ingredients
- Dried senjed, rinsed3 tbsp
- Golden raisins, rinsed2 tbsp
- Dried apricots, rinsed4 pieces
- Pitted prunes, rinsed4 pieces
- Raw almonds2 tbsp
- Raw pistachio kernels2 tbsp
- Walnut halves2 tbsp
- Boiling water, for blanching nuts2 cups
- Cool drinking water2 cups
- Rose water, optional1 tsp
Method
- Place the almonds and pistachios in a heatproof bowl, cover with boiling water, and let stand for 10 minutes.
- Drain the nuts, slip off the almond skins and any loose pistachio skins, then rinse well under cool water.
- Rinse the senjed, raisins, apricots, prunes, and walnuts separately until the water runs clear, rubbing gently to remove any dust.
- Put the senjed, raisins, apricots, prunes, peeled almonds, peeled pistachios, and walnuts into a clean glass bowl or jar.
- Pour in 2 cups cool drinking water, add the rose water if using, and stir gently.
- Cover and refrigerate for at least 12 hours, preferably 24 hours, until the fruits plump and the soaking water becomes lightly amber and sweet.
- Stir gently before serving, then divide the fruit, nuts, and syrupy liquid between two small bowls.
- Serve chilled with a spoon, making sure each bowl has a little of all seven mewa.
