  6. Roll the dough very thinly on a lightly floured surface, about 2 mm thick.
  7. Cut the dough into rectangles about 8 x 5 cm.
  8. Make 4 lengthwise slits inside each rectangle without cutting through the edges.
  9. Thread alternating strips through the center to form the traditional braided griwech shape, gently stretching the ends to open the pattern.
  10. Heat the oil in a deep pan to 170°C.
  11. Warm the honey gently with 1 tsp orange blossom water in a small saucepan, then keep it fluid off the heat.
  12. Fry the griwech in small batches until golden on both sides, turning carefully so the shape stays open.
  13. Drain briefly, then dip the hot pastries directly into the warm honey for 1 to 2 minutes.
  14. Lift out the griwech, let excess honey drip off, and sprinkle with sesame seeds.
