  5. Add the ground masala and cook for 3 to 4 minutes, stirring often, until the oil begins to glisten at the edges.
  6. Pour in 1 cup water, add the slit green chilli, kokum if using, and remaining salt; bring to a gentle simmer.
  7. Slide in the marinated fish pieces in a single layer, spoon some curry over them, and simmer gently for 7 to 9 minutes until the fish is just cooked through.
  8. Avoid stirring after adding the fish; gently swirl the pan if needed so the pieces do not break.
  9. Taste and adjust salt or tamarind, then rest the curry off the heat for 5 minutes.
  10. Garnish with fresh coriander and serve hot with steamed rice.
